Alfajores de Dulce de Leche - Caramel Filled Cookies

Silestone Ivory Coast elegantly hosts melt-in-your-mouth alfajores or cookies filled with delicious dulce de leche, the Latin-American version of caramel. Have two or three of these irresistible pastries with a cup of good coffee and the company of great friends. Ingredients

2 cups flour
½ tsp salt
½ tsp baking soda
½ cup powdered sugar
½ cup butter (1 stick)
1 egg yolk
2 tsps vanilla
1 tsp anise liquor, optional
½ cup dulce de leche*
¼ cup powdered sugar

Preheat oven to 350°F. Stir the flour, salt and baking soda in a medium bowl and set aside.
Beat the sugar, butter, egg yolk, vanilla and anise liquor until light and fluffy, about 5 minutes.
Mix in the flour mixture until a dough forms. Roll out between two pieces of plastic wrap to 1/8-1/4” thick and cut into 2” rounds. Place cookies on a cookie sheet lined with parchment and bake for 12 minutes. Let cool. Spread ½ teaspoon of dulce de leche in the center of half of the cookies. Place the rest of the cookies on top. Dust with powdered sugar and serve. Store in a covered tin. 20-24 cookies

*You can find canned dulce de leche in the Latin-American food section in your supermarket.
