Coconut Cake with Crispy Coconut Flakes

Coconut lovers: This is the cake! Impress with this pretty layer cake covered by a smooth cream cheese frosting and crunchy coconut.

Coconut Cake with Crispy Coconut Flakes
12 Servings

Ingredients

2 cups flour
2 teaspoons baking powder
½ teaspoon salt
3 sticks unsalted butter, softened
1 ½ cups sugar
4 eggs
2/3 cups unsweetened coconut milk
1 teaspoon vanilla extract
1 cup sugar (for crispy coconut flakes)
2 ½ cups unsweetened shredded coconut
1 2-inch piece fresh ginger, sliced (optional)
2 8oz. packages cream cheese, softened
1 stick butter
2 cups powdered sugar
1 teaspoon vanilla

Preheat oven to 350°F.
Grease three 8-inch cake pans (or two 9-inch). Blend flour, baking powder and salt and set aside.
Beat butter and 1 ½ cups sugar until light and fluffy, about 5 minutes. Add eggs one a time, beating well after each addition, and then add the vanilla. At low speed, add flour mixture alternating with coconut milk and beat until smooth.
Divide cake batter into prepared pans and bake about 25-30 minutes or until toothpick inserted in the middle comes out clean.
For the crispy coconut flakes: Bring 1 cups sugar, ½ cup water and ginger to a boil until sugar dissolves. Discard ginger and set aside. Toss coconut and syrup and spread on a baking sheet lined with parchment paper. Bake about 12-15 minutes until golden brown, stirring occasionally.
Beat cream cheese and butter until fluffy, add powdered sugar and vanilla and beat until smooth.
To assemble, place one layer on a cake stand and spread about ½ cup of frosting. Repeat with the remaining layers; frost sides. Press the coconut over the sides and the top to cover completely.
