Recipe of the Month: June 2010

Mexican Ham Sandwich and Cucumber Agua Fresca
This month’s host is Silestone Orange Fuego

In Mexico, this is a very popular comfort food that is enjoyed at picnics or when watching a ‘futbol’ game. There are ‘torterias’ everywhere where you can order the classic ‘Torta de Jamon’ or a myriad of other torta creations. The agua fresca is the everyday drink at the dinner table. It is simply made with cold water, fruits or vegetables and sugar. It’s so refreshing that you will have to make several pitchers to keep up with the demand!

Mexican Ham Sandwich and Cucumber Agua Fresca
Torta de Jamon y Agua Fresca de Pepino
4 servings

Ingredients for Tortas

2 pieces French bread, cut in half lengthwise
8 slices Virginia ham
8 slices swiss, colby or mexican manchego cheese
2 roma tomatos, cut in slices
1 avocado, cut in slices
1 cup shredded lettuce
A few slices of canned sliced jalapeno peppers
½ cup refried beans
2 tsp mayo, optional
2 tsp sour cream or mexican cream, optional

Spread beans, mayo and sour cream on baguettes. On each baguette, distribute half of the rest of the ingredients evenly. Cut each baguette in half. Enjoy.

Ingredients for Agua Fresca

2 cucumbers, peeled and coarsely chopped
4 cups cold water
2 cups ice cubes
1 cup sugar
2/3 cup fresh lime juice
A couple sprigs of mint

Combine half of the ingredients in blender. Blend until smooth but slushy. Transfer mixture to pitcher. Repeat with the remaining half. Place additional ice cubes in glasses and fill with cucumber drink.
