Recipe of the Month: April 2010Queso Fresco with Corn and Poblano and Tangerine Mojitos
Silestone Green Fun adds playfulness and freshness with its bright color to our Cheese with Corn and Poblano pepper appetizer, escorted by Tangerine Mojitos, a fun twist to the traditional recipe. Fresh Cheese with Corn and Poblano Ingredients 1 round Queso Fresco, Feta or other fresh cheese Heat oil in pan. Saute onions and poblanos until tender. Add corn and heat through. Season with salt and pepper. Set aside. Scoop center of cheese round to resemble a bowl and set on a plate. Chop the rest of the cheese and toss with the poblanos. Fill the cheese bowl with the mixture. Serve with corn chips. If you wish, you can serve warm by heating in the microwave for 1 minute or in the oven for 10 minutes. Tangerine Mojitos Ingredients Crush the mint, sugar and lime slices in a mortar or with the back of a spoon. Distribute ice in tall glasses then add ¼ of the mint in each glass. For the adult version, add rum. Pour juice and mineral water. Very refreshing. Enjoy!
