Lemon Cupcakes with Buttercream Frosting

For his son’s graduation, my friend Linda Scheuerman treated us to a very pleasant afternoon where we enjoyed the conversation of good friends, great food and a lot of fun. We had East Coast style brats, buffalo wings, fruit brochettes and pretty lemon cupcakes delicately served on blue china atop her Silestone Brazilian Brown island. Linda shared her delicious cupcakes recipe with us.

Lemon Cupcakes with Buttercream Frosting
12 servings

Ingredients

1 ½ cups flour
1 ½ teaspoon baking powder
½ cup milk
1 teaspoon vanilla
½ cup (1 stick) unsalted butter, room temperature
1 tablespoon lemon juice
1 lemon finely grated zest
¾ cup sugar
2 eggs

Preheat oven to 350°F. Line 12 muffin tins with paper cups.
Whisk flour and baking powder and set aside. In a small bowl, mix milk and vanilla and set aside. Beat butter, lemon juice, zest and sugar in large bowl until light and fluffy, about 3 minutes. Add eggs one at a time, mixing well after each addition. Add half of the dry ingredients and the milk and beat at low speed. Add the other half and mix until incorporated.
Divide batter among muffin cups. Bake about 20-25 minutes or until a toothpick inserted in the middle comes out clean. Cool completely and decorate with frosting and sprinkles.

BUTTERCREAM FROSTING

½ cup (1 stick) unsalted butter, room temperature
3 cups powdered sugar
½ cup milk
½ teaspoon vanilla
Sprinkles for decoration

Beat all the ingredients, except sprinkles, until smooth. Frost cupcakes and decorate with the sprinkles.
